I would like to book a rental car at the Airport of Eleftherios Venizelos in Athens. Does premium cover reduce my excess to 0? And does it cover theft and roadside assistance?

Reduce your liability. Most car hire suppliers have excess of between €300-1500. Some as high as 3000. If the car was damaged or stolen (for example) you would be liable to pay the excess amount.
